Post subject:  Lemon Curd-- Microwave

4 oz Butter
8 oz Sugar
6 TBSP Lemon Juice
Grated rind of 3 large Lemons --not as large as my lemons though.
3 beaten eggs

Put butter sugar juice and rind in large bowl and mic for 3 mins on high stir half way through
Beat eggs int the mix and cook on high 5 mins or until thick --stirring every min.
Allow to cool and spoon into sterilized warm jars then seal.
