One of the things I have missed since moving to Cyprus is a traditional sunday roast!
My personal favourite is a nice leg of lamb, however I do mine a bit differently......
When preparing the lamb I get some dried apricots which I cut into slithers, then I stab the lamb & insert the slithers of apricot into each hole (you want about 20 - 30 stabs)
Then massage some honey over the lamb, being sure to get some into each hole as well!
Then roast it SLOWLY on about 160 - 170 for about 2 hours.
It is YUMMY!
Especially if accompanied by honey roasted carrots & parsnips, proper roast potatos & steamed broccoli!
