For sauce: 12 fl.oz pink grapefruit juice 6 fl.oz white wine Whole peppercorns
Cakes: 500 grammes froxzen thawed shrimp, roughly chopped 2 stalks celery fine chopped Red onion fine chopped 3tbsp mayonnaise 1 egg, beaten Dash chilli flakes, or chopped fresh chilli, to taste Worcestershire sauce, to taste Fresh breadcrumbs
For sauce, place ingredients in pan bring to boil and simmer until reduced slightly. Then, either thicken with butter, removing peppercorns, or with cornflour For cakes, mix all ingredients, except breadcrumbs. Coat in crumbs and leave to stand in fridge until ready to fry. Cook in oil for approx 4 mins per side. Serve with sauce.
