I do enjoy just popping up to the village for a coffee and a chat - and shopping. The farmers round here load their just picked produce into their twincabs and stop for coffee (and sales) at the kafeneo. So yesterday, we got fresh potatoes, melon, super fresh corn on the cob (yummy on the BBQ with lemon and olive oil) and today our friendly farmer neighbour stopped by for a coffee at home, and handed over a bucket full of apples, tomatoes and a football sized cabbage. He also offered figs, but one of our trees is cropping heavily and OH won't eat more than one a day - all the more for me :lol:

I can see it's time to head back into the kitchen, despite the heat, and make another batch of biscuits ... cinnamon, maybe.

OK Tanny (and anybody else interested)

Simple biscuit recipes

Ginger Biscuits

140g s/r flour
40g sugar
2 generous tbsp ground ginger
110g butter

Mix dry ingredients together. Rub fat into flour to make dough. Roll out (or flatten with heel of hand) and cut to preferred shapes. Place on lined baking tray and bake at 180C for 15-20 mins until golden brown. Cool, eat and enjoy!

(I usually add approx 2 tbsp finely chopped root ginger to the almost finalised dough, and for VERY ginger biscuits, increase the ground ginger! You could experiment with stem ginger but maybe reduce the sugar accordingly.)


Cinnamon Biscuits

As ginger biscuits, but replace the ginger with cinnamon and just before the dough is finalised, add sultanas, chopped if you prefer.


If you want to be healthy, replace up to half the butter with low fat natural yoghurt or low fat Philadelphia cheese. And of course, for diabetics and dieters, replace the sugar with Candarel or similar - amend the quantities accordingly.

Recipe for all your lovely figs.

Cut in half and place in an ovenproof dish. Sprinkle with cinnamon, a few cloves and then pour over some Commandaria and bake in oven. Serve with ice cream. Scrummy.

Sounds lovely, but my figs don't survive long enough to have to cook them :crylaughin I eat loads fresh each day - with no adverse effects either :oops: :lol:
