I'm trying to think of a nice meal to cook for my tea (dinner, or perhaps evening meal for you posh types) :D , to help comfort me in my current unwell state, and thought it might be useful to get some ideas for easy home-cooking recipes from the Paphos People!

I tend to be the main chef in our house ('er indoors describes herself as "domestically challenged") Cooked a lovely pepper steak for us last night, which went down very well, but has raised expectation levels so that tonight's effort will need to be good. :!:

Any suggestions?

1 tin coconut milk
1 large breast :wink:
1 jar green curry paste
1\4 t spoon cillie powder (optional)
2 cloves garlic (crushed)
1 large red pepper thin sliced.
1\2 chicken cube ..

1 large cup of Basmati rice.


cut large breast into strips, fry in pan with oil (until sealed)
add 2 table spoons of green paste and garlic , (chillie optional)
fry a bit longer .
add coconut milk and 1\2 stock cube,, cook for 10 minutes , add red pepper cook another minute..

boil rice , and serve .. :wink:

I have increased my repertoire to include:

Stir Fry
Lasagne
Stovies
Spag Bol
Carrot soup
Carrot cake

I lived in Edinburgh until I was 22, so I didn't need to cook - so many fantastic restaurants and cafes there it was rude not to frequent them!

My first attempt at making something traditional was Mince and tatties. How on earth would I have known that you had to do something called 'browning off the mince'. :shock: As far as I was aware, you whacked the mince straight in a pan of water and let it sort itself out. Bless him, he ate it.... I didn't. The grey mess was horrific, but when coupled with my over zealous attempt at garlic mash it was all a little too much!

I was just lucky enough to bag a husband who excelled in the kitchen!

So does that mean Peppermint, that you'll be providing the desert for the Launch then: Carrot Cake :wink:

Personally, I don't eat veggies, salad or fishy things, so I'll be calling at 'Wiltons' on the way :lol:

I'm also lucky in the fact that Jackie use to be a cook in a previous life, so I won't go hungry & there's always tinned food :roll:

This one sounds as if it should be disgusting but its quick, easy and really tasty.
Tuna Fish curry.

1 large onion
mushrooms
curry powder
tin of Heinz tomato soup.
3 tins of tuna in brine (drained)


Fry onions and mushrooms
add curry powder - as much or as little as you like
add tuna and stir
add tin of tomato soup and stir
bring to boil and then simmer for a couple of mins
serve with rice

Thanks for the suggestions - ducked the issue last night by getting a pizza instead, but have bought some keftedes for tonight, which I think I shall tittilate with barbecue sauce and accompany with some nice fresh veg - essential vitamins to boost the old immune system!

What's everyone else having?

So far today I have cooked;

Pasta Bake with a jar of Cheese & Bacon sauce, I added to it, Virginia Ham, Onions & Mushrooms (lightly fried in Olive Oil).

With a side salad of Tomatoes & Cucumber with Olive Oil and Sea Salt & Pepper and a HOT plate of Garlic Bread (home made) with Dried Parsley.

That was lunch for us and the staff.

This afternoon, I made fresh Lemon Curd and Tea Cakes for Louis (Aged 3) for when he got home from school. Which he rejected – Then I had to make Strawberry Tea Cakes from a packet!!!

And DINNER tonight is Shepherds Pie with Carrots, and Cabbage steam fried in Olive Oil with 1 glove of crushed Garlic.

Followed by LOADS of Keo!!!

Ps - I start work in the office around 5am - So I have time to cook --- With the phone glued to my EAR...

Well I know you all worry if you don't know what I'm having for my tea :wink: so tonight I'm contemplating a take-away, what with it being the weekend and everything.

Yet to make a final decision (you can't rush into these things), but one of my favourites is chicken kebabs, chips and coleslaw from the local takeaway, accompanied with come of my secret stash of Nando's chilli sauce, extra hot! :manic

Any other exciting dishes on the agenda out there this weekend?

Just had a delicious chinese takeaway and a beer while watching poor old Vera Duckworth bow out of Corrie - almost shed a little tear (but don't tell the hubbie - he'll laugh at me for being a softie and remind me it's not real life it's just a soap !!)

Stovies were cracking last night - Mrs F got a bit carried away with the quantity though, so needed a lie down after finally ploughing my way through it all! (have to leave a clean plate - goes back to my chidlhood - we were never allowed to leave the table until we'd eaten everything!) :piggy

Might try one of my speciality pasta dishes tonight - got some nice chorizo to chuck in there, and some of my special recipe garlic bread as accompaniment! :D

Glad you asked Jean. I don't have a clue either. They sound fattening, though. :lol:

And are they full of gluten? I am stuffing my face with gluten whilst I still can. Thursday sees the biospy and then I am on countdown to the final analysis.

I am raiding Wiltons for the fruit tarts while I can. Yummy.

3 large potatoes, peeled and thickly chopped
1 large onion
Loads of Pepper

Whack it all in a big pot and cover with water and leave until potatoes go soft.

Drain the liquid from the pan then add a can of corned beef and stir through.

Serve in a massive dollop with beetroot.

If you are using sausage, add them chopped into the pan before adding the water.

It's a fabulous winter warmer - probably healthier with sausages I think!

Chicken piggies :D

Take a chicken breast and butterfly it open and tender with wood mallet :lol:

Lay on top some nice garlic and sage stuffing and smooth out.Then roll chicken up.Wrap with bacon and use wood skewers ie toothpicks to hold while cooking.

Place in oven at 180 for about 45 mins.

Luverly and whatever veg you desire.

Variation on your theme - a Canadian friend of mine cooked chicken by butterflying open and malleting. Then spread cream cheese on, or sprinkled grated cheese, added bits of brocolli and any other finely chopped veg, rolled up then dipped in beaten egg and then crushed up crisps then baked in the oven for about 25 mins. Scrummy

Definitely going to give DP's tavas a shot as well - looks nice and straightforward!

Handing the reins to Mrs F again tonight for her speciality lasagne, usually served with garlic bread and peas - always a triumph!

Well the lasagne went well as expected, but culinary events took a decided turn for the worse later in the evening....

Just settling down with a DVD and glass of wine when Mrs F decides she wants some popcorn - well I've never made it before but had a cheap bag of corn just waiting to be popped, so thought why not?

All started well enough - got it going in a nice big saucepan, popping away gently, but after only a couple of minutes I began to suspect that I had may have seriously misjudged the quantity required - pan was almost full already! :shock: It was popping away with a vengeance by this stage, so I had to make a snap decision - take it off the heat and settle for what I've got, or take the lid off and let nature take it's course....

Well, I decided to grab hold of the horns of this particular dilemma, and took the lid quickly off the pan....

Big mistake. :(

The sudden release of pressure meant that the popcorn exploded into action and started popping even more furiously, flying all over the place :shock: It was like the beach landing scene in Saving Private Ryan :rocket so i was forced to take cover under the kitchen table and waited for things to calm down....

When I eventually crawled out a few minutes later I was knee deep in the stuff - knocked up some nice toffee sauce for the amount that had managed to stay in the pan, while Mrs F kindly cleared up the debris - such a waste! :cry:

Anyway, lessons learned:

1. A small, inconspicuous looking bag of corn can produce a quite astonishing quantity of popcorn :shock:

2. If there's ever a war, don't bother calling me up - I'm rubbish under fire! :oops:

So you're ok cooking but anything in a packet, don't bother :lol:

Also a passive eh :roll: no use in a battle, even surrounded by a :tank or :chopper

I packed in the fag's in july (last) And when they say Eat for

England ...well thats now what i do for a living :wink:

Thing is iv lapsed this last couple of weeks , and really do enjoy a fag with a glass of wine , have a couple each night :oops:

It does stop me thinking fooooooood
But chicken is one of my fav's as is Garlic, muchrooms ,

Finally got around to trying this last night DP - I was initially wary that you had somehow stumbled upon a recipe for Geordie kryptonite and were trying to get to me by nefarious means, but decided to risk it anyway....

I have to say it was absolutely cracking, we both loved it - I would even go so far as to say it was a Major success! :D

Recommend it to anyone who hasn't tried it yet.

I feel I have to share with you all the tale of sandwich perfection that I created yesterday!

I need you to picture the scene - in the kitchen, lunch time, feleing peckish and needing something fairly substantial before heading off to the pub for the football - nothing in particular planned, but I had a couple of nice fresh baguette-style rolls from the bakery, so decided to get creative with the contents of the fridge...

Final ingredients:

1. The afore-mentioned fresh bread, nice and chunky, sliced down the middle and lavishly buttered
2. Salami
3. Chorizo sausage
4. Red and yellow peppers, lightly grilled
5. Sliced olives
6. Finely chopped green chillies
7. Hot chilli sauce
8. Sprinkling of salt and pepper
9. Prawn cocktail crisps, to serve

All blended together to create a symphony of lunch-tastic splendour! I have to say, the final result was magnificent - a taste sensation that I will certainly be re-creating in the near future! :D

Any other sandwich-based recommendations??

I am a basic person really when it comes to sarnies. I also count the calories a bit too.

My favs are chicken and stuffing
Prawns (from Seafood in Yerosikpou) seafood sauce and lettuce - Iceberg.
Egg mayo which stink the office out! Reduced cal of course!

I have to be gluten free, but the bread is tasty, so I don't mind. I will stick to toast and marmalade for the time being. I can cope with that.

Just off for a slice or two for tea. :D
