 Post subject: Banana Caramel ice cream

20 oz sugar
6 tbsp + 12 fl. oz water
6 fl. oz whipping cream

8 very ripe bananas mashed
3 tbsp lemon juice

Stir sugar & 6 tbsp water in pan over medium heat til sugar dissolves. Bring to boil, do not stir, swirl pan occasionally. When syrup becomes deep amber remove from heat and add cream & water (it may foam up). Return to heat and stir to melt caramel lumps. Pour into bowl and refrigerate til cool. When cool ( 4 hrs minimum) add bananas & lemon juice. Pour either into ice cream maker and process, or into large tupperware container. Place in freezer and every couple of hours take out and beat until crystals dissolve. Do this 3 or 4 times.
