Thought some of you might like to try these these two easy recipes. The microwave cake is one I invented myself and have other variations of it if anyone is interested, Lime Curd Cake and Coffee and Walnut Cake.

CHOCOLATE CAKE DONE IN THE MICROWAVE


6 OZ SUGAR
6OZ FLOUR
6OZ BUTTER/MARG
3 EGGS
2 TABLESPOONS COCOA POWDER
1 TABLESPOON OF MILK
1 1/2 TEASPOONS BAKING POWDER

CHOCOLATE BUTTER ICING

8 OZ ICING SUGAR
4 OZ BUTTER/MARG
1TABLESPOON COCOA POWDER

Put all the cake ingredients into a mixing bowl and whisk with an electric mixer for about 4 minutes until smooth.

Pour into a greased microwavable dish. Place the dish on top of an upturned plate in the microwave. This is important as the cake will not cook in the middle if you do not do this. Cook for 9 mins.

Turn out and cut cake in half and allow to cool before putting on the icing.

Icing

Put ingredients in a bowl and mix with an electric mixer. Put half the mixture on one half the cake and sandwich to the two halves together. Putting the rest of the icing on top of the cake and decorate as required.


QUICK & EASY FRUIT CAKE

I MUG OF DARK BROWN SUGAR
I MUG OF MILK
1 ½ MUGS OF DRIED FRUIT
4OZ BUTTER OR MARGARINE
2 MUGS OF SELF RAISING FLOUR
2 EGGS

Put sugar, milk, butter and dried fruit in a saucepan. Heat on a low heat until all the ingredients have melted together. Test to make sure the mixture is only warm not hot, if too hot wait until it has cooled down a little bit. If you have the mixture too hot you will scramble the eggs when you put them in! Mix in the flour and the two eggs and stir it until it is all mixed in together.

Pour into a greased cake tin and put in the middle of the oven Gas mark 4 for about 1 ¼ hours or maybe a bit longer. Test to see if done by putting something sharp (maybe a knife) into the centre of the cake and if it comes out clean then it is done. Leave in the tin for about 10 mins before turning out.

As promised here are the other recipes. Hope you enjoy them. Everyone at work raves over the Lime Curd Cake.

LIME CURD CAKE DONE IN THE MICROWAVE

6 0Z DARK BROWN SUGAR (TO GIVE COLOUR)
6 0Z BUTTER/MARG
6OZ FLOUR
4 EGGS
1 TABLESPOON OF MILK
1½ TEASPOONS OF BAKING POWER

ICING

6 OZ ICING SUGAR
3 OZ BUTTER/MARG
½ JAR OF LIME CURD (can be bought from Farmer’s Markets or local markets. If not available Lemon Curd could be used)

Put all the cake ingredients into mixing bowl and whisk with an electric mixer until smooth.

COFFEE & WALNUT CAKE DONE IN THE MICRWAVE

1TABLESPOON OF MILK
1½ TEASPOONS OF BAKING POWER

ICING

6 OZ ICING SUGAR

1 TSP INSTANT COFFEE WITH VERY SMALL AMOUNT OF BOILING WATER
HALVED WALNUTS

Put all the cake ingredients into mixing bowl and whisk with an electric mixer until smooth.

Pour into a greased microwavable dish. Put an upturned plate in the microwave and place dish on top of it. This is important otherwise cake will not cook in the middle. Cook for 9 minutes.

Turn out the cake and cut in half. Allow to cool before putting on the icing.

ICING

Mix the coffee and water together and then add to the icing sugar and butter/marg in a bowl and whisk with an electric mixer. Put half the mixture on one half of the cake and sandwich the two halves together. Put the remaining half of the icing on the top of the cake and decorate with the halved walnuts.

You can add some crushed walnuts to the first half of icing and place in the middle of the cake.


LUSCIOUS LEMON CAKE

4 OZ BUTTER/MARG AT ROOM TEMPERATURE
6 0Z SUGAR
6OZ FLOUR
1TSP BAKING POWDER
2 EGGS
4 TABLESPOONS MILK
GRATED RIND OF 1 LARGE UNWAXED LEMON

SYRUP FOR ICING

3 TABLESPOONS ICING SUGAR
JUICE OF 1 LEMON

Pre-heat oven to Gas mark 4 and line a 2 lb loaf tin with baking parchment. Put all ingredients into a bowl and whisk with an electric mixer for about 4 minutes until a smooth, thick batter is formed.

Grease the tin and spoon mixture into the tin and smooth out with a spoon. Bake on middle shelf of oven for about 1 hour.

Mix icing sugar and lemon juice together and pour over loaf while warm and then leave in tin to cool.

Hi Mandy

Hope you enjoy them. I know all my family and friends do. Every time my daughter and son-in-law come down from Durham I have to make him 2 lemon cakes and then he cuts them up and freezes them and takes them with his lunches to work! Even my 3 year old grandson loves the lemon cake.

Sent the recipe for chocolate cake to my daughter at Uni, as she likes cakes and baking
she really enjoyed the chocolate cake, said it was yummy!!

I am glad she liked it and it is so easy. Going up to Durham on Friday so have got to get some lemon cakes made for son-in-law and also daughter has roped me into making a lemon cake and chocolate cake for her work colleagues!!

Glad you liked it Mandy. This is the one the people at work all go mad for. Haven't made any cake for a while but am due to make a chocolate cake for work next week so I might throw a lime curd cake in at the same time.

Just found these recipes and they sound yummy!Lynw20, please can you tell me what size dish do you use ?Do I need to line it with a case?

Also on a similar note do you happen to know where I could buy cake tins for oven baking, particulary 18cm and 20cm size? I have only seen much bigger ones in the supermarket so far.

Hi Jilly,

I use 7" (sorry I do not know metric sizes) cake tin, obviously one suitable for microwave where you need to. Could do the microwave cakes in any shape really depending on what you have got, may be even something like a pyrex dish. Yes I do line the base of the tins. the fruit cake is done in either a 7" or 8" tin or even divide the mixture into two 2lb loaf tins. the lemon cake is done in a 2lb load tin. Sorry can't help you about where to buy tins as I am still in UK and have not really looked.
