This may sound like a stupid question but does anyone know how the Cypriot restaurants cook their potatoes?
The ones I am talking about are the ones that are sort of half way between roast and boiled. They are generally halved and they have a pale yellow colour. They have the internal texture of a roast potato but the external texture of boiled.
I find them absolutely delicious and would like to reproduce them at home.

Try them in a big pot, with the lid on, in the oven with a little olive oil, lemon and bayleaves.....very yummy :lol:

Brian you put them cut side up --salt and pepper-- then cover with quite a bit of oil then water until they are covered you could use marj instead of oil --bake on 200c for about 1 hr . This is my way of making them. Marj

Watched tv last night nigella and she did them with a covering of dry semolina :shock: looked good though.Best not test out on xmas day though.
